Ingredients

  • 1 can of whole kernel corn, drained
  • 1 can of cream-style corn
  • 1 box of Jiffy corn muffin mix
  • 1 cup of sour cream
  • 1/2 cup of melted butter
  • 1 cup of shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the whole kernel corn, cream-style corn, Jiffy corn muffin mix, sour cream, and melted butter.
  3. Stir until well combined.
  4. Fold in the shredded cheddar cheese.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Bake for 45-50 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Let it cool for a few minutes before serving.

Notes

  • This casserole can be made ahead of time and stored in the refrigerator before baking.
  • Feel free to add diced jalapeños for a spicy kick.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
