2 acorn squashes
1 cup wild rice
2 cups vegetable broth
1 cup fresh cranberries
1/2 cup chopped walnuts
1/2 cup diced onion
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Cut the acorn squashes in half and scoop out the seeds.
In a pot, combine wild rice and vegetable broth, bring to a boil, then reduce heat and simmer until rice is tender.
In a skillet, sauté onions and garlic until translucent.
Add cranberries, walnuts, thyme, salt, and pepper to the skillet and cook for a few minutes.
Mix the cooked wild rice with the sautéed mixture.
Stuff the acorn squash halves with the wild rice mixture.
Place the stuffed squashes on a baking sheet and bake for 30-35 minutes until the squash is tender.
Serve warm and enjoy!

For a vegan option, ensure the vegetable broth is plant-based.
