Ingredients

Scale
  • 2 lbs of chicken thighs
  • 1 cup of diced carrots
  • 1 cup of diced celery
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 4 cups of chicken broth
  • 1 tsp of dried thyme
  • 1 tsp of paprika
  • Salt and pepper to taste

Instructions

  1. Place the chicken thighs at the bottom of the crock pot.
  2. Add the diced carrots, celery, onion, and garlic on top of the chicken.
  3. Pour the chicken broth over the vegetables and chicken.
  4. Sprinkle thyme, paprika, salt, and pepper over the mixture.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken and mix it back into the soup before serving.

  • Make sure all ingredients are Whole30 compliant.
  • This dish can be stored in the refrigerator for up to 4 days.
  • Feel free to add other vegetables like zucchini or bell peppers.
