Ingredients

  • 34 lbs pork shoulder
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 orange, juiced
  • 1 lime, juiced
  • 1 cup chicken broth

Instructions

  1. Place the pork shoulder in the crockpot.
  2. Add the quartered onion and minced garlic on top of the pork.
  3. In a small bowl, mix together the cumin, oregano, salt, and black pepper.
  4. Rub the spice mixture all over the pork.
  5. Pour the orange juice, lime juice, and chicken broth over the pork.
  6. Cover and cook on low for 8 hours or high for 4 hours.
  7. Once cooked, shred the pork with two forks and mix it with the juices in the crockpot.
  8. Serve warm with your favorite Whole30 compliant toppings.

Notes

  • For extra flavor, sear the pork shoulder in a skillet before adding it to the crockpot.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
