Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 2 cups tortilla chips
  • 2 cups shredded cheese
  • 1 cup sour cream
  • 1/2 cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and heat through.
  4. In a greased casserole dish, layer half of the tortilla chips, followed by half of the beef mixture, and half of the cheese.
  5. Repeat the layers with the remaining tortilla chips, beef mixture, and cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool for a few minutes before serving.
  8. Top with sour cream and chopped green onions before serving.

  • This dish can be made ahead of time and stored in the refrigerator before baking.
