Ingredients

Scale
  • 2 cans young green jackfruit in water, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups vegetable broth
  • 2 bay leaves
  • 8 corn tortillas
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the cumin, smoked paprika, oregano, chili powder, salt, and pepper, cooking for 1-2 minutes.
  4. Add the drained jackfruit to the skillet, breaking it apart with a fork or spoon.
  5. Pour in the vegetable broth and add bay leaves. Bring to a simmer and cook for 20-25 minutes, until the jackfruit is tender and absorbs the flavors.
  6. Remove bay leaves and shred the jackfruit further if desired.
  7. Warm the corn tortillas in a separate skillet or microwave.
  8. Assemble the tacos by filling each tortilla with the jackfruit mixture and garnishing with fresh cilantro and lime juice.

Notes

  • For extra flavor, marinate the jackfruit in the spices for a few hours before cooking.
  • Serve with a side of vegan consomé for dipping.
  • Feel free to add toppings like avocado or vegan cheese.
