1/2 cup pineapple juice
3 tablespoons adobo sauce
2 cloves garlic, minced
1 tablespoon cumin
1 tablespoon oregano
1/2 teaspoon chili powder
1/4 teaspoon black pepper
1/4 cup chopped fresh cilantro
1 small onion, diced
1 cup diced pineapple

Instructions
In a bowl, combine pork, pineapple juice, adobo sauce, garlic, cumin, oregano, chili powder, and black pepper. Marinate for at least 2 hours or overnight.
Preheat a grill or skillet over medium-high heat.
Cook the marinated pork for about 5-7 minutes on each side until fully cooked and slightly charred.
Remove the pork from the heat and let it rest for a few minutes before slicing it into small pieces.
Warm the corn tortillas on the grill or skillet.
Assemble the tacos by placing the sliced pork on the tortillas, and topping with diced pineapple, onion, and cilantro.
Serve with lime wedges and your favorite salsa.
Notes
For a spicier version, add more chili powder or fresh jalapeños.
These tacos can be served with a variety of toppings such as avocado, radishes, or sour cream.
