Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup chicken broth
  • Juice of 1 lemon

Instructions

  1. In a bowl, mix together olive oil, garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, black pepper, and cayenne pepper.
  2. Coat the chicken thighs with the spice mixture.
  3. Place the sliced onion at the bottom of the slow cooker.
  4. Add the seasoned chicken thighs on top of the onions.
  5. Pour the chicken broth and lemon juice over the chicken.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
  7. Shred the chicken with two forks and mix it with the juices in the slow cooker before serving.
