Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup honey
  • 1/2 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli)
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix together honey, soy sauce, and minced garlic.
  3. Pour the honey garlic mixture over the chicken.
  4. Add the mixed vegetables on top of the chicken.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, remove the chicken and vegetables from the slow cooker.
  7. In a small bowl, mix cornstarch and water to create a slurry.
  8. Stir the slurry into the remaining sauce in the slow cooker and cook on high for 10 minutes to thicken.
  9. Serve the chicken and veggies with the thickened sauce drizzled on top.

Notes

  • For a spicier kick, add red pepper flakes to the sauce.
  • Feel free to use any vegetables you have on hand.
  • This dish pairs well with rice or noodles.
