Instructions
Preheat the oven to 425°F (220°C).
Wash and scrub the fingerling potatoes, then cut them in half lengthwise.
In a large bowl, combine the potatoes, olive oil, vinegar, salt, and pepper. Toss until the potatoes are well coated.
