  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved

  • 1/2 cup edamame, shelled
  • 1/4 cup purple cabbage, shredded
  • 1/4 cup avocado, sliced
  • 2 tablespoons sesame seeds
  • 2 tablespoons soy sauce or tamari

Instructions

  1. Prepare the quinoa according to package instructions and let it cool.
  2. While the quinoa is cooling, chop all the vegetables into bite-sized pieces.
  3. In a bento box, start by placing a portion of quinoa at one side.
  4. Arrange the cherry tomatoes, cucumber, bell peppers, shredded carrots, edamame, purple cabbage, and avocado in separate sections of the bento box.
  5. Sprinkle sesame seeds over the top for added crunch.
  6. Drizzle soy sauce or tamari over the quinoa and vegetables before serving.
