Ingredients

  • 1 medium pumpkin
  • 1 cup wild rice
  • 1 pound sausage (Italian or your choice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1/2 cup grated cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the top off the pumpkin and scoop out the seeds and stringy insides.
  3. In a skillet, cook the sausage over medium heat until browned. Remove and set aside.
  4. In the same skillet, sauté the onion and garlic until translucent.
  5. Add the wild rice, vegetable broth, sage, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until rice is cooked.
  6. Mix the cooked sausage into the rice mixture.
  7. Stuff the pumpkin with the rice and sausage mixture, and top with cheese if desired.
  8. Place the stuffed pumpkin in a baking dish and add a little water to the bottom of the dish.
  9. Bake for 45-60 minutes, or until the pumpkin is tender.
  10. Serve warm and enjoy!

  • Choose a small to medium pumpkin for easier stuffing.
  • Feel free to add other vegetables or spices to the filling.
  • This dish can be made vegetarian by omitting the sausage and using plant-based alternatives.
