6 large eggs
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon apple cider vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/4 teaspoon turmeric (for color)
Chives or parsley for garnish
Instructions
Hard boil the eggs by placing them in a pot of cold water, bringing it to a boil, then covering and letting them sit for 12 minutes.
Cool the eggs in ice water, then peel them and slice in half lengthwise.
Remove the yolks and place them in a bowl, adding mayonnaise, Dijon mustard, apple cider vinegar, salt, pepper, paprika, and turmeric.
Mash the yolk mixture until smooth and well combined.
Fill the egg whites with the yolk mixture using a piping bag or spoon.
Garnish with chives or parsley to resemble pumpkin stems.
Chill in the refrigerator before serving.
Notes
For a spicier kick, add a dash of hot sauce to the yolk mixture.
These can be made a day in advance for convenience.
