  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups vegetable broth
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
  2. Add chili powder, cumin, and smoked paprika, stirring for about 1 minute until fragrant.
  3. Stir in the pumpkin puree, black beans, kidney beans, diced tomatoes, and vegetable broth.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for 20-30 minutes.
  5. Season with salt and pepper to taste before serving.
