2 cups of rice
1 lb chicken thighs, boneless and skinless
1 cup honey BBQ sauce
2 cups chicken broth
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Chopped green onions for garnish
Instructions
Heat olive oil in a large pan over medium heat.
Season the chicken thighs with garlic powder, onion powder, salt, and pepper.
Add the chicken to the pan and cook until browned on both sides.
Remove the chicken from the pan and set aside.
Add the rice to the pan and stir for a minute.
Pour in the chicken broth and bring to a boil.
Reduce heat to low, add the chicken back to the pan, and pour the honey BBQ sauce over everything.
Cover and simmer for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
Garnish with chopped green onions before serving.
Notes
For extra flavor, marinate the chicken in the honey BBQ sauce for a few hours before cooking.
You can substitute brown rice for white rice, but adjust the cooking time accordingly.
This dish can be easily doubled for larger servings.
