6 large eggs
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon white vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup finely chopped green onions
1/4 cup crumbled bacon
Paprika for garnish
Instructions
Hard boil the eggs by placing them in a pot of cold water and bringing it to a boil. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
Cool the eggs in an ice bath for 5 minutes, then peel and slice them in half lengthwise.
Remove the yolks and place them in a mixing bowl. Mash the yolks with a fork.
Add mayonnaise, Dijon mustard, white vinegar, salt, and black pepper to the mashed yolks and mix until smooth.
Fold in the chopped green onions and crumbled bacon.
Fill the egg whites with the yolk mixture using a spoon or piping bag.
Sprinkle with paprika for garnish before serving.
Notes
For a spicier kick, add a dash of hot sauce to the yolk mixture.
These deviled eggs can be made a day in advance; just keep them covered in the refrigerator.
Feel free to substitute bacon with chopped olives for a vegetarian option.
