  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1/2 cup onion, chopped
  • 1/2 cup milk
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup shredded cheese
  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup butter
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, onion, milk, egg, salt, and pepper.
  3. Shape the mixture into a loaf and place it in a baking dish.
  4. Bake for 1 hour or until the internal temperature reaches 160°F (70°C).
  5. While the meatloaf is baking, boil the potatoes in salted water until tender.
  6. Drain the potatoes and mash them with butter and sour cream until smooth.
  7. Once the meatloaf is done, sprinkle shredded cheese on top and return to the oven for an additional 10 minutes.
  8. Serve the meatloaf with a generous portion of mashed potatoes.
