2 cups cooked shredded chicken
1 cup cream cheese, softened
1 cup shredded cheese (cheddar or Monterey Jack)
1 cup sour cream
1 cup green enchilada sauce
1/2 cup diced green onions
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, combine the shredded chicken, cream cheese, half of the shredded cheese, sour cream, green enchilada sauce, green onions, garlic powder, onion powder, salt, and pepper.
Mix until well combined.
Spread a thin layer of enchilada sauce on the bottom of a baking dish.
Spoon the chicken mixture into low carb tortillas and roll them up.
Place the rolled tortillas seam-side down in the baking dish.
Pour the remaining enchilada sauce over the top and sprinkle with the remaining shredded cheese.
Bake for 20-25 minutes or until the cheese is bubbly and golden.
Let cool for a few minutes before serving.
Notes
For a spicier version, add diced jalapeños to the chicken mixture.
