Ingredients

  • 4 large eggs
  • 1 cup cooked sausage, crumbled
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the crumbled sausage, cheese, green onions, salt, pepper, garlic powder, and paprika.
  3. Cut the tops off of halved bell peppers or zucchini to create boats.
  4. Fill each boat with the sausage and egg mixture.
  5. Crack an egg on top of each filled boat.
  6. Bake in the preheated oven for 20-25 minutes, or until the eggs are set.
  7. Remove from the oven and let cool slightly before serving.
