Ingredients

  • 1 lb boneless, skinless chicken breast
  • 4 cups low-sodium chicken broth
  • 2 cups mixed vegetables (carrots, celery, bell peppers)
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a little oil over medium heat and sauté the onion and garlic until translucent.
  2. Add the chicken breast and cook until browned on all sides.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the mixed vegetables, diced tomatoes, thyme, basil, salt, and pepper.
  5. Reduce heat and let it simmer for 20-25 minutes, or until the chicken is cooked through.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Serve hot and enjoy!

Notes

  • Feel free to add any other vegetables you like.
  • This soup can be stored in the refrigerator for up to 3 days.
  • For a spicier version, add red pepper flakes.
