Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for 45-60 minutes until tender.
  3. Remove the potatoes from the oven and let them cool slightly.
  4. Cut the potatoes in half and scoop out some of the flesh, leaving a small border.
  5. In a bowl, mix the scooped potato flesh with butter, sour cream, salt, and pepper.
  6. Stir in half of the cheddar cheese, bacon, and green onions.
  7. Fill the potato skins with the mixture and top with the remaining cheese.
  8. Return to the oven and bake for an additional 15-20 minutes until the cheese is melted and bubbly.
  9. Garnish with extra green onions before serving.

Notes

  • For a vegetarian option, omit the bacon.
  • Feel free to add other toppings like jalapeños or diced tomatoes.
  • These can be made ahead of time and reheated before serving.
