2 cups cooked shredded chicken
1 cup low-fat cream cheese
1 cup Greek yogurt
1 cup shredded low-fat cheese
1 can (10 oz) green enchilada sauce
8 small corn tortillas
1/2 cup chopped green onions
1/2 teaspoon garlic powder
1/2 teaspoon cumin
Salt and pepper to taste
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, mix the shredded chicken, cream cheese, Greek yogurt, half of the shredded cheese, green enchilada sauce, green onions, garlic powder, cumin, salt, and pepper.
Warm the corn tortillas in a skillet until pliable.
Fill each tortilla with the chicken mixture and roll them up.
Place the rolled tortillas seam-side down in a greased baking dish.
Pour any remaining enchilada sauce over the top and sprinkle with the remaining cheese.
Bake for 20-25 minutes or until the cheese is melted and bubbly.
Let cool for a few minutes before serving.
Notes
For a spicier version, add diced jalapeños to the filling.
Can substitute chicken with shredded turkey or beans for a vegetarian option.
