Instructions

  1. In a saucepan, heat the lobster stock over low heat.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  3. Add the Arborio rice to the skillet, stirring to coat the grains with butter.
  4. Pour in the white wine and cook until it has mostly evaporated.
  5. Begin adding the warm lobster stock, one ladle at a time, stirring frequently until the liquid is absorbed before adding more.
  6. After about 15-20 minutes, when the rice is creamy and al dente, stir in the lobster meat, lemon zest, lemon juice, and Parmesan cheese.
  7. Season with salt and pepper to taste, and cook for an additional 2-3 minutes.
  8. Remove from heat and let it sit for a minute before serving.
  9. Garnish with fresh parsley and additional lemon zest if desired.
