Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup pasta (small shapes like ditalini or orzo)
  • 2 cups spinach or kale, chopped
  • Parmesan cheese for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until softened.
  3. Add diced carrots and celery, cook for about 5 minutes.
  4. Stir in the diced tomatoes, vegetable broth, oregano, basil, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  6. Add the pasta and cook according to package instructions until al dente.
  7. Stir in the chopped spinach or kale and cook for an additional 2-3 minutes.
  8. Serve hot, topped with Parmesan cheese if desired.
