Ingredients

  • 2 bell peppers (sliced)
  • 1 onion (sliced)

  • 2 teaspoons chili powder
  • 1 teaspoon cumin

  • 4 cups cooked brown rice or quinoa
  • 1 avocado (sliced)
  • Fresh cilantro (for garnish)

Instructions

  1. Marinate the flank steak with olive oil, chili powder, cumin, salt, and pepper for at least 30 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated steak for about 5-7 minutes on each side until desired doneness.
  3. Remove the steak from the skillet and let it rest before slicing it thinly.
  4. In the same skillet, add sliced bell peppers and onion, and sauté until they are tender.
  5. In serving bowls, layer cooked brown rice or quinoa, sautéed vegetables, and sliced steak.
  6. Top with avocado slices and garnish with fresh cilantro.
