Ingredients

  • 1 cup sushi rice
  • 1 1/2 cups water
  • 1 lb fresh salmon, diced
  • 1 avocado, sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  3. Remove from heat and let it sit covered for 10 minutes.
  4. In a bowl, mix the soy sauce, sesame oil, and rice vinegar.
  5. Add the diced salmon to the sauce mixture and let it marinate for 10 minutes.
  6. Fluff the rice with a fork and divide it into serving bowls.
  7. Top the rice with marinated salmon, avocado slices, cucumber, green onions, and sesame seeds.
  8. Serve immediately and enjoy your healthy poke bowl!
