Ingredients

Scale
  • 2 cups unsweetened almond milk
  • 1/2 cup chocolate protein powder
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup chia seeds
  • 1/4 cup maple syrup
  • 1 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  2. Whisk the mixture until all ingredients are well combined and smooth.
  3. Let the mixture sit for about 5 minutes to allow the chia seeds to absorb some liquid.
  4. Whisk again to break up any clumps of chia seeds.
  5. Cover the bowl and refrigerate for at least 2 hours or overnight until the pudding thickens.
  6. Before serving, stir in dark chocolate chips if desired.
  7. Serve chilled and enjoy your high protein peppermint chocolate pudding!
