Ingredients

  • 1 cup cornmeal
  • 1 cup gluten-free all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/2 cup corn kernels (optional)
  • 1/4 cup diced jalapeños
  • 1/4 cup honey
  • 1/4 cup softened butter (for the jalapeño honey butter)

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
  2. In a large bowl, mix together the cornmeal, gluten-free flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together the milk, eggs, and melted butter.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the corn kernels and diced jalapeños if using.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
  8. While the cornbread bites are baking, prepare the jalapeño honey butter by mixing the softened butter, honey, and diced jalapeños in a small bowl.
  9. Once the cornbread bites are done, let them cool slightly before serving with the jalapeño honey butter.

Notes

  • For a spicier version, add more jalapeños to the butter.
  • These bites can be frozen and reheated in the oven.
  • Serve warm for the best flavor.
