  • 3 ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups gluten free all-purpose flour
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add the melted coconut oil, honey (or maple syrup), eggs, and vanilla extract to the mashed bananas and mix well.
  4. In another bowl, combine the gluten free flour, baking soda, salt, and cinnamon (if using).
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Make sure your gluten free flour blend contains xanthan gum for better texture.
