Ingredients
Scale
4 chicken breasts
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
Salt and pepper to taste
2 pounds potatoes, peeled and cubed
1/2 cup milk
4 tablespoons butter
1 pound carrots, sliced
2 tablespoons brown sugar
1 tablespoon butter (for carrots)
Instructions
Preheat the oven to 400°F (200°C).
In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Coat the chicken breasts with the mixture.
Place the chicken in a baking dish and bake for 25-30 minutes or until cooked through.
Meanwhile, boil the potatoes in salted water until tender, about 15-20 minutes.
Drain the potatoes and mash them with milk and butter until smooth and creamy.
In a skillet, melt butter over medium heat, add sliced carrots, and sprinkle with brown sugar. Cook until the carrots are tender and glazed, about 10 minutes.
Serve the garlic herb chicken with mashed potatoes and glazed carrots on the side.
Notes
For extra flavor, marinate the chicken for a few hours before cooking.
Feel free to add other herbs like parsley or oregano.
Adjust the sweetness of the glazed carrots to your preference.
