Ingredients

Scale
  • 2 filet mignon steaks (6–8 oz each)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup asparagus, trimmed
  • 1 cup mashed potatoes
  • 1 tablespoon butter
  • 1/4 cup red wine (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the filet mignon steaks with salt, pepper, garlic, rosemary, and thyme.
  3. Heat olive oil in a skillet over medium-high heat and sear the steaks for 3-4 minutes on each side.
  4. If using, add red wine to the skillet and let it reduce for a minute.
  5. Transfer the skillet to the preheated oven and cook for an additional 5-7 minutes for medium-rare.
  6. While the steaks are cooking, steam the asparagus until tender.
  7. Prepare the mashed potatoes by mixing them with butter, salt, and pepper.
  8. Once the steaks are done, let them rest for a few minutes before serving.
  9. Plate the filet mignon with asparagus and mashed potatoes, and drizzle with any pan juices.

Notes

  • For best results, use a meat thermometer to check the doneness of the steak.
  • Let the steak rest for at least 5 minutes before slicing to retain juices.
  • Feel free to add your favorite sauce or seasoning to enhance the flavor.
