1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
2 cups cream cheese, softened
1 cup dulce de leche
½ cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
¼ teaspoon salt
Instructions
Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
In a bowl, mix graham cracker crumbs and melted butter until combined, then press into the bottom of the prepared dish.
In a large mixing bowl, beat the cream cheese until smooth, then add dulce de leche and sugar, mixing until well combined.
Add eggs one at a time, mixing well after each addition, then stir in vanilla extract and salt.
Pour the cheesecake mixture over the crust and smooth the top.
Bake for 30-35 minutes or until the center is set and slightly jiggly.
Allow to cool at room temperature, then refrigerate for at least 4 hours before slicing into bars.
Notes
For a richer flavor, use homemade dulce de leche.
These bars can be topped with whipped cream or additional dulce de leche before serving.
Store leftovers in an airtight container in the refrigerator for up to 5 days.
