Scale
1 lb chicken breast
1/2 cup dill pickle ranch dressing
8 small corn tortillas
1 cup shredded cheese (cheddar or mozzarella)
1/2 cup diced pickles
1/4 cup chopped fresh dill
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Season the chicken breast with salt and pepper, then bake for 20-25 minutes until cooked through.
Once cooked, shred the chicken and mix it with the dill pickle ranch dressing.
In a skillet, heat a small amount of oil over medium heat.
For the crispy cheese lace, sprinkle a thin layer of shredded cheese in the skillet and cook until melted and golden brown, then remove and let cool.
Warm the corn tortillas in a separate pan or microwave.
Assemble the tacos by placing the shredded chicken mixture on the tortillas, topping with diced pickles, fresh dill, and a piece of crispy cheese lace.
Serve immediately and enjoy!
Notes
Feel free to adjust the amount of dill pickle ranch dressing to your taste.
For a spicier kick, add jalapeños or hot sauce.
These tacos can be made ahead of time; just reheat the chicken before serving.
