Ingredients

  • 1 cup whole wheat flour

  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or a sugar substitute

  • 2 large eggs

  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the grated zucchini, applesauce, honey, and vegetable oil.
  3. In another bowl, combine the whole wheat flour, almond flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the eggs and nuts if using.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
