2 lbs chicken thighs
1 can (14 oz) coconut milk
1 onion, chopped
3 cloves garlic, minced
1 tablespoon ginger, grated
2 tablespoons soy sauce
1 tablespoon curry powder
1 teaspoon salt
1/2 teaspoon black pepper
1 cup chicken broth
1 tablespoon lime juice
Fresh cilantro for garnish
Instructions
Place the chicken thighs in the crockpot.
In a bowl, mix together coconut milk, onion, garlic, ginger, soy sauce, curry powder, salt, pepper, chicken broth, and lime juice.
Pour the mixture over the chicken in the crockpot.
Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
Once cooked, shred the chicken with two forks and stir it back into the sauce.
Serve hot, garnished with fresh cilantro.
Notes
