Ingredients

  • 2 lbs beef chuck roast
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup water
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 cup cornstarch
  • 1/4 cup cold water
  • Mashed potatoes for serving

Instructions

  1. Place the beef chuck roast in the crockpot.
  2. Add chopped onion, minced garlic, beef broth, water, Worcestershire sauce, salt, pepper, and thyme.
  3. Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
  4. Remove the beef and shred it with two forks.
  5. In a small bowl, mix cornstarch and cold water to create a slurry.
  6. Add the slurry to the crockpot and stir to thicken the gravy.
  7. Return the shredded beef to the crockpot and mix well.
  8. Serve the beef mixture over mashed potatoes.
