Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • 8 small corn tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Boil the diced potatoes in salted water until tender, about 10-15 minutes.
  2. Drain the potatoes and let them cool slightly.
  3. In a large bowl, toss the potatoes with olive oil, chili powder, cumin, and salt.
  4. Heat a skillet over medium heat and add the seasoned potatoes, cooking until crispy, about 5-7 minutes.
  5. Warm the corn tortillas in a separate skillet or microwave.
  6. Fill each tortilla with the crispy potato mixture.
  7. Garnish with fresh cilantro and serve with lime wedges.

Notes

  • For extra flavor, add diced onions or jalapeños to the potato mixture.
  • These tacos can be served with salsa or guacamole for dipping.
