Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 1/2 cup diced onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken, cottage cheese, half of the shredded cheese, onions, garlic powder, cumin, salt, and pepper.
  3. Warm the corn tortillas in a skillet to make them pliable.
  4. Spoon the chicken mixture into each tortilla, roll them up, and place them seam-side down in a baking dish.
  5. Pour the enchilada sauce over the rolled tortillas and sprinkle the remaining shredded cheese on top.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Let cool for a few minutes before serving.

Notes

  • For a spicier version, add diced jalapeños to the chicken mixture.
  • These enchiladas can be made ahead of time and stored in the refrigerator before baking.
  • Serve with sour cream and fresh cilantro for added flavor.
