  • 200g pitted dates, chopped
  • 250ml boiling water
  • 1 tsp baking soda
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a baking dish.
  2. In a bowl, combine the chopped dates and boiling water, then stir in the baking soda and let it cool.
  3. In another bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the cooled date mixture and mix until combined.
  6. Sift in the flour and baking powder, then fold gently until just combined.
  7. Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a skewer comes out clean.
  8. While the pudding is baking, prepare the toffee sauce by combining 200g brown sugar, 100g unsalted butter, and 250ml heavy cream in a saucepan over medium heat. Stir until the sugar dissolves and the sauce thickens slightly.
  9. Once the pudding is done, let it cool for a few minutes before pouring half of the toffee sauce over it.
  10. Serve warm with the remaining toffee sauce and a scoop of vanilla ice cream or custard.

  • For a richer flavor, let the pudding sit for a few hours or overnight before serving.
  • This dessert can be made ahead of time and reheated before serving.
