8 corn tortillas
2 cups enchilada sauce
1 cup shredded cheese (cheddar or Mexican blend)
1/2 cup diced onion
1/4 cup chopped cilantro
1 tablespoon olive oil
1 teaspoon cumin

Instructions
Preheat the oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat and sauté the diced onion until translucent.
Add the shredded chicken, cumin, salt, and pepper to the skillet, mixing well.
Warm the corn tortillas in a separate pan or microwave until pliable.
Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in a baking dish.
Pour the enchilada sauce over the rolled tortillas, ensuring they are well covered.
Sprinkle shredded cheese on top of the sauce.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
