  • 2 pounds beef tenderloin
  • 1 cup spinach, chopped
  • 1 cup mushrooms, diced
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Kitchen twine for tying

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic, mushrooms, and spinach until soft.
  3. In a bowl, mix the sautéed vegetables with cream cheese and Parmesan cheese.
  4. Season the beef tenderloin with salt and pepper, then make a lengthwise cut down the center to create a pocket.
  5. Stuff the beef tenderloin with the vegetable mixture and tie it with kitchen twine.
  6. Place the stuffed tenderloin in a roasting pan and roast in the preheated oven for about 25-30 minutes or until the desired doneness.
  7. Let it rest for 10 minutes before slicing and serving.
