  • 4 salmon fillets
  • 1 cup pomegranate juice
  • 1/2 cup pomegranate seeds
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, combine pomegranate juice, honey, and balsamic vinegar. Bring to a simmer and reduce until thickened.
  3. Season the salmon fillets with salt and pepper.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the salmon fillets for 3-4 minutes on each side.
  5. Pour the pomegranate sauce over the salmon and transfer the skillet to the oven.
  6. Bake for 10-12 minutes or until the salmon is cooked through.
  7. Garnish with pomegranate seeds and fresh parsley before serving.

  • For a sweeter sauce, add more honey.
