Ingredients

  • 8 corn tortillas
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 cup vegetable broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add garlic and cook for another minute.
  4. Stir in tomato sauce, vegetable broth, chili powder, cumin, salt, and pepper. Simmer for 10 minutes.
  5. In a separate pan, warm the corn tortillas until pliable.
  6. Fill each tortilla with cheese, roll them up, and place them seam-side down in a baking dish.
  7. Pour the homemade sauce over the enchiladas.
  8. Bake for 20-25 minutes until the cheese is melted and bubbly.
  9. Serve hot, garnished with fresh cilantro if desired.
