Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Steam the cauliflower florets until tender, about 10 minutes.
  3. In a large bowl, combine the ricotta cheese, eggs, garlic powder, Italian seasoning, salt, and pepper.
  4. In a baking dish, spread a layer of marinara sauce on the bottom.
  5. Add half of the steamed cauliflower on top of the sauce.
  6. Spread half of the ricotta mixture over the cauliflower.
  7. Sprinkle half of the mozzarella and Parmesan cheese on top.
  8. Repeat the layers with the remaining ingredients, finishing with a layer of marinara sauce and cheese on top.
  9. Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before serving.

Notes

  • For a spicier version, add red pepper flakes to the marinara sauce.
  • Feel free to add vegetables like spinach or mushrooms for extra nutrition.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
