Ingredients

Scale
  • 4 oz salmon fillet
  • 1 cup quinoa
  • 2 cups spinach
  • 1 tbsp olive oil
  • 1 lemon (juiced)
  • 1 clove garlic (minced)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the salmon fillet with lemon juice, garlic, salt, and pepper.
  3. Place the salmon on a baking sheet and bake for 15-20 minutes.
  4. While the salmon is baking, rinse the quinoa under cold water.
  5. In a pot, combine quinoa and 2 cups of water, bring to a boil, then reduce heat and simmer for 15 minutes.
  6. In a pan, heat olive oil and sauté spinach until wilted.
  7. Serve the baked salmon over a bed of quinoa and sautéed spinach.
