1 lb white fish fillets
1 cup flour
1 cup cornmeal
2 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1 cup shredded cabbage
1 avocado, sliced
1/2 cup pico de gallo
1/4 cup sour cream
1 lime, cut into wedges
4 cups cooked rice
Instructions
Preheat the oven to 400°F (200°C).
In a bowl, mix flour, cornmeal, chili powder, cumin, garlic powder, salt, and pepper.
Dredge the fish fillets in the flour mixture until well coated.
Place the coated fish on a baking sheet and bake for 15-20 minutes until golden and cooked through.
While the fish is baking, prepare the rice and set aside.
Once the fish is done, assemble the bowls by placing rice at the bottom.
Top the rice with shredded cabbage, baked fish, avocado slices, and pico de gallo.
Drizzle sour cream on top and serve with lime wedges.
Notes
For a spicier kick, add jalapeños to the toppings.
