Ingredients

  • 1 pound red beans
  • 6 cups water
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 bay leaf
  • 1 pound smoked sausage, sliced
  • 4 cups cooked white rice
  • Salt and pepper to taste

Instructions

  1. Rinse the red beans and soak them overnight in water.
  2. Drain the beans and place them in a pot with 6 cups of water.
  3. Add the chopped onion, bell pepper, celery, garlic, thyme, oregano, and bay leaf to the pot.
  4. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beans are tender.
  5. Add the sliced sausage and cook for an additional 30 minutes.
  6. Season with salt and pepper to taste.
  7. Serve over cooked white rice.

Notes

  • For extra flavor, use a smoked ham hock.
  • Adjust spices according to your taste.
