2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 cup granulated sugar
1 cup packed brown sugar
1 cup unsweetened applesauce
1/2 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
In another bowl, beat together the granulated sugar, brown sugar, applesauce, oil, eggs, and vanilla until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into the prepared baking pan and smooth the top.
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool completely before icing.
For the icing, combine brown sugar, butter, and milk in a saucepan over medium heat, stirring until smooth. Remove from heat and let cool slightly before spreading over the cake.
Notes
Store leftovers in an airtight container at room temperature.
This cake can be made a day in advance for better flavor.
Feel free to add nuts or raisins for extra texture.
