Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the apple cider until the dough is smooth.
  7. In another bowl, beat the cream cheese and powdered sugar until smooth and creamy.
  8. Drop spoonfuls of cookie dough onto the prepared baking sheet, then make a small indentation in the center of each cookie.
  9. Fill the indentation with a small amount of the cream cheese mixture.
  10. Bake for 12-15 minutes or until the edges are lightly golden.
